One of my favorite veggies is beets! I love them roasted, raw in salads, raw in smoothies, just about anyway you can think of! My pups come running to get their share of the luscious beets when I am cutting one open. I wonder if they can smell them? They are extremely easy to grow in your own garden, so plant some today! Since I live in Pittsburgh, PA and can’t have a outside garden during the winter months, I just plop some seeds in some potting soil and grow them inside! YUMMY!! Organic beets all year round!
Let me tell you about some benefits of beets and you will want to include them in your daily diet!
BEETS – fight cancer!! The high levels of antioxidants and anti-inflammatories can help reduce the risk of cancer. Betacyanin, the source their bright red color, helps defend cells against harmful carcinogens. The unique fiber found in beets has been linked to lowering the colon cancer risk.
BEETS – lower the risk of heart disease. Drinking beet juice has been reported to be able to help lower blood pressure in a matter of hours. The nitrates in beets are converted to nitric oxide, which helps to relax and dilate your blood vessels, improve blood flow, and thereby lower blood pressure.
BEETS – reduce the risk of dementia. The nitric acid produced by beets helps to increase blood flow including the flow to your brain. Tests done on older adults showed that after eating a high-nitrate diet that included beet juice, the adults had a greater blood flow to their frontal lobes.
BEETS – boost eye health. Don’t throw away the beet greens!! Beet greens are a good source of lutein, which helps to protect the eyes from age related problems like cataracts. The phytochemical in beets can help to improve overall eye health and nerve tissues.
BEETS – combat constipation. Beets are full of fiber therefore they help to keep the digestive system running smoothly!
BEETS – Beets are good for pregnant women since they are a source of B vitamin folate which helps in the development of infant’s spinal column. Deficiency of folate can lead to a variety of conditions called neural tube defects.
BEETS – Betaines in beet juice stimulate the functions of the liver and help to keep it healthy.
BEETS – Beetroot is a source of vitamin C that helps to prevent asthma symptoms. The natural beta-carotene in beetroot also helps to prevent lung cancer. Vitamin C is a powerful antioxidant that boosts the immune system in a number of ways. Besides acting as an antioxidant itself and defending against the effects of free radicals in the body, it also stimulates the activity of white blood cells, which are the body’s main line of defense against foreign bodies, as well as viral, bacterial, fungal, and protozoan toxins that can result in a multitude of infections and illnesses.
BEETS – Low in calories!! 1 cup of raw beetroot contains 59 calories. It also contains various minerals and vitamins that promote optimal health. So add it to your diet and reap all the benefits!
